La Scala House Dressing

Ingredients:


1/2 Small yellow onion -- chopped

1/4 Cup fresh parsley -- chopped

1/4 Cup scallions -- chopped (green part only)

1 tablespoons egg white (larger amount of egg white -- (1 to 2) makes the dressing thicker)

1 tablespoons fresh lemon juice

1 tablespoons white vinegar

1 teaspoon tarragon

1/2 teaspoon white pepper

1/2 teaspoon salt

1/4 teaspoon sugar

1/2 teaspoon garlic chopped

3 tablespoons olive oil

1 Cup vegetable oil
 

Preparation / Directions:


Chop onion, parsley and green portion of scallions. Set aside In bowl of food processor or in blender, put egg white, lemon juice, white vinegar, tarragon, pepper salt, sugar and garlic; pulse to blend. Pour olive and vegetable oils through feed tube and pulse until dressing is emulsified. Mix in onion, parsley and scallions
